One of the new habits I'd like to start this year is to have more "Meatless Monday" dinners. I am aware that I am raising a family of carnivores and this is something I am going to have to ease them into. In order to avoid getting overwhelmed, I decided to go with a good old salad. It's fast and easy and it's something they are used to. Next week I will omit the chicken and make it a true meatless dish.
Speaking of fast and easy, I love that I purchased everything to make this dish using the ClickList system by Smith's. I want to be productive this year, not just busy. Going to the grocery store takes up so much time. I love that I can meal plan and shop right at home in my pj's!

1-3 cups of chopped or bagged romaine lettuce
5 oz of cooked and chopped chicken breast
1 Fuji Apple
1 cup of dried cranberries
1/4 cup of chopped cucumber
1/4 cup of sliced cherry tomato
1/2 cup of chopped celery
3 Tbsp of Raspberry Vinaigrette
Place lettuce in a large bowl. Add chicken, cranberries, apple, cucumber, tomato, and celery. Drizzle with vinaigrette and toss to coat.
